Potato Salad with Sauerkraut (Gluten Free)
8 medium size red potatoes (10 small potatoes), boiled with skins on
1 jar of Spectrum Canola Mayonnaise (32oz)
1 package Birds Eye Frozen Sweet Peas (10 oz)
1 small yellow onion, diced
2 cups The Kraut Guy Simply Sauerkraut, drained and cut
Salt and Pepper to taste
Boil potatoes with skins on. Drain water, let cool, cube. Lightly salt and pepper.
Mix in separate bowl; mayonnaise, peas, diced onions and drained sauerkraut cut small.
Gently stir in half the potatoes and mix. Add remaining potatoes and mix.
Refrigerate a couple of hours.
Reuben Pasta Salad
2½ cups elbow macaroni or medium pasta uncooked
1/4 cup minced white onion
1 cup The Kraut Guy Simply Sauerkraut drained (save the brine)
1/2 cup dill pickles chopped
1 cup corned beef sliced or cubed
1 cup shredded Swiss cheese
2/3 cup mayonnaise
1/3 cup sour cream
1/3 cup Thousand Island dressing
1½ tablespoons Dijon mustard
3 tablespoons sauerkraut brine
salt & pepper to taste
Cook pasta according to package directions. Drain and run under cold water.
Combine all dressing ingredients in small bowl.
Toss all ingredients with the dressing. Refrigerate one hour before serving.
Drizzle with extra Thousand Island dressing before serving, if desired.
Sausage and Sauerkraut Dish
8 medium size red potatoes, boiled, peeled and cubed
1 small onion, diced
1 pound sausage (fully cooked) cut into small pieces
1 jar (16 oz.) of The Kraut Guy Classic Caraway Sauerkraut
Salt and pepper to taste
Boil potatoes and let cool. Peel and cube potatoes and lightly season with salt and pepper. In crock pot, add potatoes and diced onion. Cut sausage into small pieces and add to mixture. Pour the jar of sauerkraut and juice over potatoes, onions and sausage. Stir gently. Set crock pot on high for two hours. Continue to stir periodically. Serves 4
